Last night in Toulouse

Listed in The Michelin Guide, Emile, ranked number 13 out of 939 restaurants in Toulouse, is on the agenda for tonight.
 John has had this on his wish list to sample the authentic Cassoulet Toulousian, cooked in goose fat! I'm sure there'll be something I will like too. We booked a table the day before and it was a good thing cause they were very busy and were turning people away in droves. Many sad little faces :-(
My entrée was a stunner. Asparagus, green and white, layered with poached eggs, with a beetroot vinaigrette and covered with a paper thin sheet of cured pork fat, briefly grilled just to melt it. John was envious, he had ordered Oysters which were good, but nothing compared with mine.
However his Cassoulet was superb, and he did it justice, just like his Mum did teach him. I had a Seafood stew, equally tasty, but too much for a Debra.
You will notice a long flower, and one short flower......that would be because someone, who just had to play with her flower, broke it! The nice man next table, offered to swap so I could have a long one again, but it was ok, I will pay the price of touching the decoration.
This is the face and disposition of a very happy man........
